Gab's Summer Beet Gazpacho

Gazpacho, a classic on all Spanish tables throughout the summer to stay fresh and combat the heat in the best way possible. For those of you who may not have tried Gazpacho, it’s a cold soup made by blending raw vegetables in a blender so it truly is the easiest recipe ever. An authentic gazpacho will always be a classic but this time we decided to give it a little Gabfoods twist with some beets. If you’re not a major fan of beets, don’t worry because you can barely taste it but it gives the gazpacho an extra freshness and its beautiful red color. 

It’s the best recipe when you’re looking for something fresh, light, easy and quick to eat in the summer heat. 

No recipe is complete without the garnish and you can top off this gazpacho with finely chopped tomatoes and cucumber to keep it more authentic or you can give it a slight twist like we did and add some Indian dukkah (because you know we love our fusions ;) ).

Ingredients

  • 3.3 lbs / 1.5 kg summer tomatoes 
  • 2 large beets (400g)
  • 1 garlic clove
  • 1 onion
  • ½ a large green pepper
  • 1 cup / 250 ml olive oil
  • ½ cup / 115 g apple cider vinegar
  • Salt to taste

Method 

  1. Peel the tomatoes, beets, garlic clove and onion. Remove the seeds of the pepper. 
  2. Place all of the ingredients in a high power blender and blend until all of the ingredients are combined.
  3. Reserve in the fridge for at least 2 hours.
  4. Serve cold.
